Pasta Soup
I know you all love a fun story that inspired a recipe and this one is one of my favourites.
I was with Sofia and Jorge at their summer pasta class. They were making three types of pasta and getting excited about using the pasta machine and rolling out and making their own pasta.
This is all the bow pasta that they made.
They were so excited and after letting me photo it, we had garlic butter pasta for dinner with plenty of parmesan and it was so delicious.
But I am a waste hater and before leaving the cooking class I noticed just how many tiny scraps of pasta was leftover. I asked permission to take them, and as they were heading for the bin, wrapped a good portion in cling film and took it home with me.
This is the pasta leftovers.
I then chopped them into chunks ready for cooking with.
Then into the jar they went, and they were ready a few days later for us to make into a delicious hearty pasta soup.
Then of course, the veggies we were using we already had in, so I could call this a zero cost soup dinner.

How Do You Make Soup In A Soup Maker?
The process of making soup in the soup maker is so EASY. And is not like making soup the traditional way in a pan on the stove.
You load your soup maker pasta soup recipe ingredients into the soup maker, add the lid, press chunky soup setting and then the soup maker will beep at you when its done.
Can You Put Pasta Straight Into Soup?
Yes, you can put pasta straight into soup. But note, because of the starch in pasta it will thicken the soup up a lot.
Therefore, make sure you have plenty of stock in your soup to make way for the pasta.
Or another idea is to make a tomato vegetable pasta soup because tomato is much thinner of a sauce compared to a cheesy sauce.
Is It Better To Cook Pasta Before Adding It To Soup?
No, its much better to add raw pasta to the soup. Soup is fast cooking, and you would normally cook it in boiling liquid, so the rest of the soup can be your boiling liquid.
Add the pasta to the soup at the point the soup is piping hot and doesn’t have too long left.

Pasta Soup Recipe Ingredients
Pasta – Lets start with the pasta. We used some fresh leftover pasta bits. You can do the same or maybe you have bought some fresh pasta shapes. Anything you have will work well.
Veggies – This vegetable pasta soup is loaded up with plenty of vegetables. You can mix and match with what you have in. We used carrots, celery, red onion, courgette, fresh basil, garlic, and tomatoes.
Tomatoes – Then of course for an extra tomato flavour and for a great alternative to loads of stock, we are including some tinned tomatoes.
Stock – We recommend adding in some stock. We made instant pot vegetable stock and freeze it and added one of the cubes to the soup.
Seasonings – For seasonings, we are keeping it simple with salt and pepper and oregano.

Instructions
Place the stock into the bottom of the soup maker. Then load it up with just peeled and chopped vegetables, adding everything but tinned tomatoes, seasoning, pasta, and green beans. Place the lid on and cook for 20 minutes on the chunky soup setting.
Next remove the soup maker lid and add stir.
Add in everything else including your little chunks of pasta. Place the lid back on the soup maker and cook on chunky for another 10 minutes.
Check the soup maker and adjust with extra seasoning if needed.

Notes
Time. Our soup maker only has one time option for chunky soup and that is 30 minutes. So, I usually just pause it, add the other ingredients and then resume. Or you might need to cancel the soup at the correct time.
