On the first Parisian menu, Breton langoustines, scallops and small red mullet in scamp, crispy vegetable leaves; spinach cake with enoki. The black truffle: spindle Jerusalem artichoke, egg yolk and grilled zucchini… sole of small boat braised in manzanilla milk.
