What are the main ingredients in Rocky Road? ›

Typically, rocky road contains dark and milk chocolate, with chunks of marshmallow and biscuit inside. However, variations also contain peanuts, raisins, almonds, or anything else you like! We've also drizzled ours in white chocolate, but you could also do this with Nutella or caramel sauce.

Though there are variations from the original flavor, it traditionally comprises chocolate ice cream, nuts, and whole or diced marshmallows.

The origins of Rocky Road

One theory suggests that Rocky Road emerged in Australia around 1853 as a clever way to salvage spoiled ingredients imported from the UK. These past-their-prime ingredients were allegedly mixed with chocolate and nuts to mask their off-flavours.

Rocky Road is a chocolate fridge cake (or traybake) made using melted chocolate, crushed biscuits or shortbread, and marshmallows, all tumbled together and set in the fridge. Tiffin is also made with melted chocolate and biscuits or shortbread but is sprinkled with dried fruits for a juicy burst of sweetness.

There are variations of Rocky Road ice cream. Some recipes will use marshmallow swirls or different nuts like pecans or peanuts in place of almonds, but traditionalists tend to favor the classic marshmallow pieces and almonds.
